Never one to be late, Kenneth Ivan Weaver arose Tuesday morning, January 28, at 1:00 am, left his earthly body and went to be with our Lord.  No doubt that the coffee was steaming, the bacon sizzling, and pancakes flipping when the angels were summoned to the breakfast table!
Born on October 9, 1921 in Mattoon, Illinois, Kenneth was the third of four children of Earl and Bertha Weaver. Now they are all together again.
In 1940, Weaver left Illinois and followed Barbara Anne Spaulding and her mother Opal Luby Spaulding to Dallas, Texas.  Ken and Barbara were married on June 7, 1941.  He was employed at a warehouse briefly, but Weaver soon joined Barbara’s family in the Luby’s cafeteria business where he worked for the next 35 years.  Kenneth trained and managed in cafeterias in Dallas, Waco, and eventually Harlingen.  From 1950 to 1975, he owned and managed the cafeteria in Harlingen until it was finally incorporated.  Weaver was the Area Vice President for Luby’s in the Rio Grande Valley, Corpus Christi, and Victoria from 1974 to 1977.
During World War II, he served his country from 1942 to 1946.  An avid outdoorsman, Weaver fished, hunted, and golfed in Texas, all over the United States, and Canada.
Kenneth served on the boards of Luby’s, Harlingen State Bank, Life Begins at Forty, and the Harlingen Country Club for many years.
Left behind with so many tender memories are Barbara Weaver, wife of 72 years, their only son, John Kent Weaver and his wife G’ Anne of Raymondville, two granddaughters, Jennifer Hawkes of San Antonio and Stephanie Swartz (spouse Andrew Swartz) of Houston.  The Weaver’s three great grandchildren are Harllie Hawkes, David Swartz, and Ava Swartz.  Surviving nephews and nieces are Mike and Melanie Newland, Greg and Marilyn Newland, Pat and June Newland, Mary Beth and Reagan Ross, Kathy Koenig, and all their children.
A memorial service celebrating Kenneth’s life will be held Saturday, February 1, 2014, at 11:00 am, at Buck Ashcraft Funeral Home.  A private burial will be held at Mont Meta Memorial Park.
Honored to be pallbearers are Andrew Swartz, David Swartz, John Newland, William Newland, Greg Newland, Pat Newland, Lamar Smith, and Travis Fuentes.
